Sassier Stir-Fry
2 Tbs. toasted sesame oil
2 cups zuchini, cut in 1/2 moons
1 red bell pepper sliced
1 cup matchstick carrots
1 clove garlic; chopped
1/4 cup soy sauce
2 TB. cornstarch
heat oil. stir in veggies & garlic for 3 to 4 minutes. Mix soy sauce w/ 1 cup water. add cornstarch and stir to dissolve. add to veggies. cook 1 to 2 minutes; until thickened. Add tuna - heat through another 1 - 2 minutes. Serve over rice or similar.
I think I'm going to make some whole wheat muffins or WW blueberry muffins to go with!

ReplyDeleteTwo thumbs up. We rate everything new by the question, "Would you eat it again?" We both said yes. Very tasty. I added onion. How could you make a stir fry without onion? Oh, and I added sesame seeds!
